Taiwan is a relative new comer to tea cultivation, having only started in the mid 19th century. It specializes in Oolong teas and the cultivars for Tung Ting originated in the Wuyi Mountains of China. The Tung Ting Mountain in central Taiwan from which this tea is named stands at around 2500 ft and is often shrouded in fog. The name, Tung Ting, translates to “Frozen Summit” or “Icy Peak.” Tung Ting Oolong is composed of 3-4 leaves of the plant, is a rolled tea and is on the lighter side of the oxidation scale for oolong teas.
