Chirp-A-Tea Chirp

Dear Tea Friend,
“School days, school days, good ole golden rule days....” September has traditionally been the month for back to school; although, many schools are now going back as early as August and others are on year long schedules. Regardless of which plan is used, school, in one way or another, is a part of many of our lives. All tea lovers know that tea fits every occasion, so host a “Back to School” tea party for teachers, students, moms of children in school, bus drivers, teacher’s aids, or administrative personnel. In short, anybody that has anything to do with school. A tea party can be a great way to encourage students or show appreciation to those whose work keeps the school year ticking.

For the home schooling community, an association tea is a great way to get to know each other. Alternatively, someone could take the lead and organize a tea for the board members of the association. My favorite idea is for Dad and the children to either take Mom out to her favorite local tearoom or give her a gift certificate that she can use when she needs a little personal time.

Apples are the food most associated with school. This month’s easy recipe for Apple Roulage will make a great addition to any school themed tea. Since we also instantly associate apples with autumn, I hope it will become one of your favorites and you will find frequent opportunities to prepare it for your guest this fall.

RECIPE
Oatmeal Butterscotch Scones To fit today’s busy lifestyle, I have adapted my favorite authentic Swiss recipe for Apple Roulage by using a cake mix instead of the “from scratch” cake. The filling was already so simple, just whipped cream and apples.

Busy Day Apple Roulage

  • 1 box yellow cake mix
  • 4 eggs
  • ½ cup of water
  • 2 cups whipping cream
  • 6 apples
  • 4 Tablespoons sugar
  • 1 lemon

Prepare 1 large jelly roll pan or two small ones by spraying with cooking spray. Cover with waxed paper and then spray waxed paper with cooking spray.

Preheat oven to 350 degrees Fahrenheit.

In a large bowl, beat eggs on medium high. Turn mixer on low and gradually add water, then cake mix. Beat about 2 minutes on medium. Bake for about 12- 15 minutes for small pan, 20 minutes for large pan, or until center of cake springs back when touched.

When cake is done, turn out immediately onto a towel that has been sprinkled with powdered sugar. Peel off waxed paper. Roll cake along with the towel from short side to short side. Let cool.

Whip cream. Peal and grate apples and fold into cream. Also fold in sugar and juice from lemon.

When cake has cooled, unroll and spread filling on top. (Divide filling equally if making two cakes) Re- roll cake without towel. Place seam side down on a cake plate and sprinkle with powdered sugar.

Etiquette Reminder
We all lead very busy lives. Make a point to be punctual to all your meetings and appointments. If you are legitimately detained and cannot be punctual, be sure to phone and give an estimated time of arrival. In keeping with our school theme, remember, our children learn best by watching what we do. Teach your children the importance of being punctual. Get them to school on time and always be on time picking them up from school or activities.
