Dear Tea Friend,
Has the dreary winter weather got you "mad as a
March hare?" When contemplating what to share with you in this
month's Chirp-A-Tea Chirp newsletter, St. Patrick's Day, of course,
came to mind. But, the phrase "March madness" also appeared. I
researched the term and discovered it referred to the wild behavior
of the hare during its mating season, March. The mental picture of a
hare behaving wildly seemed to fit how I am feeling about the winter
weather; which has me going mad. I also thought about the sales that
will be advertised as "March Madness Sales," and I discovered that
the NCAA has adopted the term as the name for a big basketball
event. Not being a basketball fan, I wasn't even aware of that. So,
here is my suggestion for March. Getting out of the house will
surely soothe your March madness, so, go shopping with some friends
to take advantage of the March Madness sales and, don't forget to
stop for tea at your favorite tearoom. While you are out taking care
of your March madness, leave some St. Patrick's Corned Beef Tea
Sandwiches (recipe below) and iced tea for your husband and children
to snack on while they enjoy March Madness NCAA basketball.
Everybody will be happy.
RECIPE
St. Patrick's Corned Beef Tea Sandwiches
1 can (12 0z.) of corned beef
1 cup of cabbage finely grated
1 -3 green onions (according to taste preference) finely
chopped
1 cup of mayonnaise
2 loaves (24 oz.) of soft oatmeal bread
Cut bread slices into four-leaf clover shape, using a 4-inch
cookie cutter. Mix corned beef, cabbage, onions, and mayonnaise.
Spread each shaped bread slice with mixture. Sandwich bread slices
together in pairs. Garnish with some sliced green onions, if
desired. Number of sandwiches will vary depending on how generously
each slice is spread.
