Chirp-A-Tea Chirp

Dear Tea Friend,
We are excited to be debuting our new logo, and Chirp-A-Tea Chirp, our new newsletter. Each issue of Chirp-A-Tea Chirp will include a recipe, a Tea Tip, and an Etiquette Tip. We hope you will look forward to receiving each issue.

We also encourage you to visit our redesigned website, www.carolinaparakeet.com where you will find "Birds of a Feather", our gift shop, and "Feathered Friends", a link listing of some of our favorite web sites. Under "Tea and Etiquette" you'll find my list of etiquette classes and presentations. If you are looking for a place to have tea, "Why Wing It?"our tea room directory, and "Early Bird", our listing of tea events can also be found there. Log on and submit your favorite tea room and/or an upcoming tea event in your area and we will consider adding it to the appropriate list.

I don't know about you, but for me, part of the fun of visiting tea rooms is finding no two alike. They are each an expression of the proprietor(s). While visiting tea rooms to add to our "Why Wing It?" listing, we visited A Lil Peace of Heaven in Port Royal, SC. This tea room just celebrated its one-year anniversary. RECIPE
Tea Time Sandwiches

Trim crusts from thinly sliced bread; cut into circles, rectangles, squares or triangles. Spread with suggested toppings below. Place on damp cloth and refrigerate covered until serving time.

Strawberry Cheese: Blend one 8-ounce package cream cheese, softened, with ¼ cup strawberry preserves; stir in 3 tablespoons chopped pecans. Spread on date nut bread and garnish with strawberry halves.

Chicken Curry: Combine 1 ¾ cups finely chopped cooked chicken, 1/4 cup mayonnaise, ¼ cup plain yogurt, ½ teaspoon curry powder and salt and pepper to taste. Spread on cinnamon raisin bread and garnish with sliced almonds.

Dilled Shrimp: Combine 1 cup finely chopped cooked shrimp, ¼ cup sour cream, ½ teaspoon dill weed and salt and pepper to taste. Spread on brown or whole wheat bread and garnish with additional fresh dill.

Tea Tip
To make your tea sandwiches extra special, spread the bread with a flavored butter that will compliment the main ingredient of your sandwich (example: smoked turkey could be paired with sage butter, and pork, fish, or seafood would go well with lemon- thyme or dill flavored butter. Just soften butter to room temperature, add herb of choice and cream. Make a log of the butter and wrap in plastic wrap. Return to refrigerator for a few hours to let flavors mingle. Soften before using.

Etiquette Reminder
When serving Afternoon Tea, tea sandwiches are served first to blunt the appetite. They should be small in size and the filling should not be runny or messy.
